Question: I baked Dorie Greenspan's Perfect Party Cake

It's the best white (lemony) cake I've ever baked from scratch! I never made swiss meringue buttercream before. Easier than I thought and fabulous.

The directions said to set the prepared cake pans on a baking sheet. I baked the 2 cake pans on my extra-large cookie sheet. Was I supposed to? The cakes seemed to bake a little uneven, but were still moist and perfect.

Also, I always bake at a lower oven temp. I baked this at 345°.

I think you what you did was perfect!

I love this recipe too - I make it over and over again. Although I do add one egg yolk to the batter for richness (I do that to almost any cake I make:)

 
Agreed, Ann, it's a great cake. The purpose of

setting the prepared cake pans on the extra baking sheet is to keep the cake from getting too dark on the bottom, and for better heat distribution. In the industry we often do that for baked items, including cookies, when we don't want the bottom to get more done than the rest of the product.

In the book, Dorie notes that the original recipe was given to her by Nick Malgieri (I love kicking back and reading books like this just for the author's stories and tips...it's like reading a novel...lol). Online she shares a few tips for making this perfect party cake.

Thank you both for your insight and link to Dorie's tips. I omitted the coconut & raspberry filling

and was still extremely happy with the end product.

I used buttermilk and I'm glad I did since Dorie's advised us to.
