Question on Ice Cream and ice crystals. Any thoughts on why ice cream seems to develop

ice crystals? Is my freezer set too high? We notice that we can only keep ice cream in the freezer for 2 weeks; otherwise it seems to crystalize. Happens on all brands; even home made from a creamery.

Any thoughts / suggestions?

Have you tried putting plastic wrap/parchment paper directly on top of the surface of the ice cream once opened?

 
I've always thought it is from the freezer going through self-defrost cycles and warming up then re-

freezing. When I had a manual defrost freezer, I kept my ice cream in it and thought it worked better. The refrigerator freezer is the worst.
