question should I refrigerate fresh peanut butter, almond butter.

Carol, I personally refrigerate my fresh almond and peanut butter because

they do not contain preservatives and tend to go rancid more quickly than store-bought jarred nut butters. Since they tend to spoil quicker than store-boughts I choose to refrigerate them.

 
In the 52 plus years I have been married, I have never refrigerated peanut butter.

I keep it in the pantry, because when I want it, I want it now and I want it to spread. I prefer Jiff with chunks of peanuts. I have never had a jar go rancid. I buy only one jar and a small one, at a time. I use it for baking cookies too, so it does not last longer than six months or so.

 
On Jif's FAQ page they say it's

okay to store their peanut butter, once opened, about 3 months on the pantry shelf. http://www.jif.com/jif-faq

At Whole Foods where I personally grind my almond butter and peanut butter there's a note next to the nut grinding machine advising refrigeration due to the lack of salt, sugar, emulsifiers, stabilizers and preservatives. So that's why I refrigerate the freshly ground stuff.

Refrigerate PB or Not...

I've gotten into the habit of refrigerating fresh ground PB because it separates fairly easy and for safety sake. Since there is no preservatives, I prefer not to take a chance. Jif or Skippy has preservatives so ok to keep at rm temp.

 
So, I am reading into this that the secret to a long, happy marriage is to not

refrigerate the peanut butter? : )

I actually never heard of refrigerating peanut butter. I am not really a fan, but would think that if it cold that it would not be creamy for a dressing or a sandwich...

 
From the point of food safety, refrigeration of nut butters is more a question

of not letting them go rancid rather than being "safe" to eat. There was a big recall of various nut butters last year for Salmonella. Refrigeration doesn't make any difference for something like that.
