Question. What is the best method of preparing and freezing apples for apple pie?

I found granny smith apples on sale and would like to freeze them until I am ready to bake pies for the holidays. Any suggestions?

I have read about preparing the apple pie mixture and then pouring it into platic wrap lined pans

and freezing these. then slip out the frozen filling and store in bags until ready to slip into a pie crust to bake. I haven't tried this myself.

 
That would work really well Ang, probably a bigger time saver than my idea,

I get commercially frozen IQF apple slices at work. I was thinking you could peel,slice,toss with a bit of lemon juice and then freeze on a sheet pan and bag when they are frozen. Bad thing here is you have to have freezer space for sheet pans?

Actually I like Ang's way better and maybe do a few bags IQF for cakes, etc.

 
They work better for me that way as well. As long as they are baked from cold, the crust does

not get soggy. Otherwise, with both the pear and apples pies, if I bake them ahead, they're just not as 'fresh'.

I did an experiment one summer.

I think also, that they 'stand up' better in the freezer if uncooked.

I do the filling alone for saskatoons (blueberries) and freeze in a jar. It's perfect for pies in the winter.
