Quick bread as a sandwich bread? Any bread bakers have

a recipe or idea about this, please?

The spinach, goat cheese bread got me thinking about the possibility of whipping up a "sandwich quick bread," instead of yeast-based with multiple proofing and rising over hours. I haven't made it yet - maybe it will be perfect with chicken, tuna or fried egg tucked between 2 slices - with mayo or without.

I did a search and found several savory recipes to try but nothing "plain" and no one touting their bread for sandwiches.

Can this work? Colleen

 
Beer bread would work--it is a self-rising flour bread. If you are making

BLTs these days, folding some bacon into the batter could make a doubly good sandwich.

 
A plain quick bread could be an Irish Soda bread recipe. . .

put the batter/dough in a loaf pan for baking. I would add a teaspoon or so of baking powder also, if the Soda Bread recipe does not call for it.
