Stir Fried Beef with Orange

3/4 lb boneless lean beef

Marinade

2 tbsp dark soya sauce

2 tsp rice wine or dry sherry

1 tsp finely chopped ginger root

1 tsp cornstarch

1 tsp sesame oil

1 tbsp. cooking oil

2 dried red chillies cut in half lengthways

Sauce (Blend)

1 tbsp finely chopped orange peel

1/2 tsp finely ground roasted Sechuan peppercorns (opt)

2 tsp dark soya sauce

1/4 tsp salt

1 tsp sugar

1/2 tsp sesame oil

2 tsps toasted sesame seeds

1. Cut beef into thin slices, cutting against grain.

2. Mix with marinade & let sit 20 minutes.

3. Heat oil until very hot.

4. Remove beef from the marinade with a slotted spoon and fry 2 minutes until brown.

5. Allow beef to drain in a colander.

6. Leave 1 tsp oil in pan and fry chillies 10 seconds.

7. Return beef and blended sauce ingredients to pan and stir fry 4 minutes.

Add sweet red and green peppers which were stir fried separately and add to beef at the end of cooking. Serve over steamed rice. Garnish with toasted sesame seeds.
