Quick egg salad

The other day I craved an egg salad sammich but didn't want to be bothered boiling the eggs. Inspiration struck.......the microwave egg poacher did the trick. Two eggs were ready in 4 minutes (50% power). By the time some celery, onion & red pepper were chopped the eggs were cool enough to mash. A little mayo, s & p and the filling was ready for the whole grain bread. Yum!

 
What is a microwave egg poacher? I have never heard of it. This sounds great, is it low fat?

The poacher, made out of plastic, has two cups into each you can break an egg, pierce the white and yolk with the point of a knife (so the egg doesn't explode) and then add a tablespoon of water. The cover is put on and then the whole thing goes into the oven. I find that for each egg I zap for 2 minutes at 50% power and get a tender egg. For a more liquid egg zap for less time.

 
I have one of these, but you can also...

just use a small "monkey dish" (1/2 cup bowl) and add a little water. Plop in the egg, cover it with a microwave-safe plate, and cook on HI for about 60 seconds for one egg (90 for two eggs). Works just a good.
