RECIPE: Quick, tasty and healthy: Rec: Pinto Bean Soup

Here's something I made up from stuff I had in my pantry that turned out really good! High in fiber, very low in fat and easy to make.

Pinto Bean Soup

2 (14.5 oz) cans pinto beans

1/2 tsp. red pepper flakes (to taste)

1 tsp. ground coriander seed

1/2 tsp. ground cumin seed

1 tsp. chicken bouillon (I use Knorr granules)

Green Tobasco Sauce (a few healthy shakes)

2 tsp. cider vinegar

juice of one fresh lime

Empty cans of beans, liquid and all, into a medium saucepan. Heat over medium heat. As beans heat, add the rest of the ingredients and stir to blend.

Continue to heat, stirring often so beans don't stick, until beans come to a boil. Reduce heat to very low and simmer slowly, uncovered, for 15 minutes. Stir often to prevent sticking.

Remove half the beans to a blender or food processor and blend until smooth, adding a bit of water if needed to keep the beans moving. Add this puree back to the bean pot and stir. Adjust seasoning and you're there!

PS: Toast cumin and coriander seeds in a dry frying pan before grinding. Makes a HUGE difference in flavor.

 
Is that the Knorr's Suiza? I was reading that it's the secret ingredient in a lot of Mexican dishes.

 
HI Curious, they sell the Knorr Suiza in most of my local grocery stores - I will check

the ingredients as compared to the chicken bouillon and see what the dif is. I do know that the Suiza does have a chicken flavor, but I'm not sure what else is going on in there.
