Quick WW bread from Whole Foods: Bacon Bread (with collard greens)

How I love a recipe that comes with its own built-in Yin/Yang Guilt Deflector.

Here's a bread (oh...carbs...I've read all the bad news about bread) that's made from 100% whole wheat (hey, that's a Good carb!) that's studded with bacon (yikes, bad, but wait--it's free of preservatives) but also crams in collard greens (oh, Goodie!).

From the Internet: "The cancer-preventive properties of collard greens may be largely related to 4 specific glucosinolates found in this cruciferous vegetable: glucoraphanin, sinigrin, gluconasturtiian, and glucotropaeolin. Each of these glucosinolates can be converted into an isothiocyanate (ITC) that helps lower our cancer risk by supporting our detox and anti-inflammatory systems."

Ya. All those multi-syllabic words. Especially when they butt up against bacon.

I can just imagine this warm with a schmear of Boursin herbed cheese spread.
