The only time I had raw corn I had terrible stomach pains after it. I just assumed

it was the corn, but maybe not. I am sensing a "lime" theme on the board today! ;O)

Dressing sounds good, not so sure about the raw corn though. I wonder if I could used leftover lime curd.

Hmmmm, I wonder... Maybe someone else here has tried raw corn, and can enlighten us?

In a pinch I use raw corn in the corn and bean salad. No problems that I'm aware of.

Thanks Luisa, but not *that* much lime curd ;o) It's pretty sweet

too, so I use it vary sparingly! Looks like a nice recipe though.
