RC: Lemon, Thyme, and Mustard Basting Sauce

I think I posted this long ago, but it is worthy of a repeat.

Lemon, Thyme and Mustard Basting Sauce for Grilled Vegetables

1/2 cup (one stick) butter (I used Smart Balance and it was great.

1/3 cup finely chopped shallots

1/4 cup olive oil

3 TBSP. Dijon mustard

2 TBSP fresh lemon juice

2 TBSP. fresh thyme

1 TBSP fresh lemon zest

Heat all ingredients until butter melts

Use on fresh beggies while grilling. Warm sauce again and pass at table.

I've used this on asparagus, onion slices, squash, zucchini, and red bell peppers. On corn on the cobb, it is totally awesome!
