use cold vinegar. Would you please send me your recipe and the amount of tarragon you use per vinegar. TIA

 
I don't measure, Elenor. I bring white wine vinegar almost to a boil, bruise a cup or

two of fresh tarragon and toss it in, let it steep at room temp for a couple of days and strain and bottle.
Love a splash on leftover fresh tuna and mixed in with some mayo on chicken salad it's the best!
