First: its better to just add the apples into the batter than layering it

also I would have used a 13x9 pan if I didn't have a tube pan. Its plentiful. I think this particular cake is an awesome breakfast cake or when you need to bring something for a potluck or a casual gathering

 
The apples tend to 'layer' themselves a bit....

but I've never layered them. Mainly because I want to make sure that batter covered everything bit of apple surface (because the batter is so good. That little hit of orange juice really adds so much!)

Hey Deb or Diane or Ang - It sounds a little too sweet for me with the 2 cups of sugar - how do you

think it would be with 1 1/2 cups?

 
my apples were quite sweet, so I cut the sugar to 1.5 cups and didn't stir any into the apples,

just the cinnamon. I also cut the oil to 3/4 cup and added some light raisins. I'm thinking of making this in 2 loaf pans next time.
