Really stupid question about Lamb Shoulder with Pancetta by Marg CDN

I know this is Lamb with PANCETTA, but,this sounds so good, and I finally found a lamb shoulder roast, and not being of the pork persuasion, I was hoping there was something I could use instead of Pancetta.

Frequently, when a recipe calls for a bit of ham or a ham bone, I use a smoked turkey leg. But , I don't think that would work here.

Hmm, bacon? Or if you don't want pork, how about the turkey-based

bacon? Or soy sauce, fish sauce, chicken boullion, or Liquid Smoke to get that salty taste?

If you don't mind pork, maybe ham or prosciutto.

Not a stupid question at all!
