This is our favorite cobbler.
Three Berry Cobbler
1 (12 oz) package frozen blackberries, thawed*
1 (12 oz) package frozen raspberries, thawed
1 (12 oz) package frozen blueberries, thawed*
1-1/2 cups sugar
½ cup all purpose flour
¼ cup butter, melted
1 tsp vanilla extract
1 (15 oz) package refrigerated piecrusts
1 large egg, lightly beaten
1 T sugar
Stir together first 7 ingredients in a large bowl, stirring just until combined. Spoon into a lightly greased 13 x 9" baking dish.
Roll 1 piecrust to fit baking dish; place on top of berry mixture. Cut remaining piecrust into ½" strips. Arrange strips in a lattice design over piecrust. Brush with egg and lightly sprinkle with 1 tablespoon sugar.
Bake at 400 for 55-60 minutes or until golden and bubbly. Source: Southern Living
*My notes: did not grease dish;could only find 1 package (raspberries) that was 12 ounces (the other 2 packages were 16 ounces); all fit into baking dish. Did not roll the piecrust--pushed it by hand into a rectangular shape, then cut off rounded sides & fit onto ends of casserole area. This is a great cobbler! Wonderful w/ vanilla ice cream. Also made it using Splenda: noticed a slight "off" taste during first serving (shortly after taking out of oven); the next day there was no off taste after heating servings in microwave.
