Last night, I fried up some breaded pork chops,
but instead of dredging them in bread crumbs or
flour, I pulverized some Fiber One cereal in my
mini food processor, seasoned it, then dipped
the chops in egg and coated them with the cereal
(I packed it on pretty good), fried them in a cast-iron
skillet a few minutes per side, then finished them off
in the oven.
The cereal has a definite flavor of its own, and
sticks to the meat very well. I was very pleased
with the results. I need to experiment a little with
the seasonings (I just used Mrs. Dash Onion & Herb
last night), but I will do this again.
The original recipe comes from "Hungry Girl", and
calls for spraying the breaded meat with cooking
spray and doing all of the cooking in the oven
