RECIPE: REC: Almond Pancakes with Dried Cherries

Although I haven't made these - I thought they sounded delicious. It is just DH and me at home - and I'm the only one who likes pancakes - so I tend to order them when out, but I've never actually made any.

Almond Pancakes w/ Dried Cherries

4 eggs

2 cups whole milk

6 T. unsalted butter, melted

½ tsp. almond extract

3 cups flour

1 (7 or 8 oz.) pkg. almond paste, crumbled

4 tsp. baking powder

½ tsp. salt

1 ½ cups dried cherries

Heat oven to 200F. Whisk eggs and milk in large bowl until blended. Whisk in butter and almond extract until well-blended. Pulse flour, almond paste, baking powder and salt in food processor until texture of coarse meal. Stir flour mixture into egg mixture just until combined; stir in cherries.

Heat griddle or large non-stick skillet over medium heat until hot; oil griddle. Ladle batter by scant ¼ cupfuls onto griddle, spreading to 4 inch rounds. Cook 2.5 minutes or until bubbles break surface of pancakes. Turn; cook 2 minutes or until golden brown. Place in oven to keep warm while cooking remaining pancakes.

Thanks, deb. These look good. How do you like the magazine?

I'm constantly getting solicitations from them. I've read a few reviews that say that many of their recipes call for unusual/expensive ingredients. Is this true? I'd love to hear what you think of it.

 
I would not say that at all...

I haven't noticed that they call for unusual/expensive ingredients. I've been getting it for about a year. I like it - but I wouldn't put it up there at all with my favourite food magazines (B.A., Cooks Illustrated, Cuisine at Home). But for $12 a year I've got a few good recipes out of it and I think that is well worth it.

I did not join 'the club' and don't plan on it - I simply get the magazine. Hope that helps,

I didn't know you could get the magazine without joining. I guess I'll

hold off since I have weaned myself down to four (including BA & Cuisine at Home - also Cooks Country & Fine Cooking). (Although I did get a free year of Gourmet recently, too!)

I'm addicted to cooking magazines...

I get something like 18! (not all are monthly and not all are strictly food).
