rind pickles this week and I was lucky to score the recipe from her.
My mom's friend is going to try them as she carved up a darling watermelon basket for a fruit salad served at my stepdad's 92nd birthday party last Sunday.
REC: Anna's Pickled Watermelon Rind
1 whole watermelon
4 packets unsweetened watermelon Kool Aid
3 cups water
3 cups sugar
3 cups champagne vinegar
Peel green skin off rinds, thoroughly remove pink flesh, if the outer side of rind is tough at all trim it. Cut into roughly 1/2" squares.
Bring everything but rind to a boil to dissolve, add rind & simmer 30 min, stirring occasionally. Strain out rind, cook to reduce by 1/3.
Pour reduced syrup back over rind, let come to room temp, refrigerate 24 hours.
