Rec Apple Brownies

This is the plan for today:

3 eggs

1 cup white sugar

3/4 cup light brown sugar

1 cup vegetable oil

1 teaspoon vanilla

2 cups all purpose flour

1+ teaspoon cinnamon

1 teaspoon baking powder

1/2 teaspoon salt

2 cups diced apples

Preheat oven to 350 degrees. In a large mixing bowl, beat eggs and sugar until fluffy and pale yellow. Add oil and vanilla; mix well. Sift dry ingredients together and mix into liquid mixture, then stir in apples.

Spray a 13" x 9" pan with non-stick spray and spread batter evenly into pan. Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.

 
It took a moment to wrap my brain around the phrase "apple brownies," but these sound delicious! smileys/smile.gif

 
After making them, I think the reason that they call them "brownies" is because they

are dense and very moist like brownies, even though it really just a compact cake that doesn't rise very much (they look more like brownies in the pan to, for this reason). Very moist!! Good breakfast food.
