RECIPE: Rec: Apple cake - it's baking in the oven now.

I and DH took the dogs for a drive down to an apple farm yesterday. The weather was great, and we visited an apple farm with 4000 apple trees. We bought 10 pound of apples, and apple cider.

They have pigs and hens there too, and we had so much fun watching the puppy (now 12 weeks) meeting hens for the first time. He was really curious, but also full of respect. He basically sat behind DH's legs and watched them from distance *LOL*

Anyways, I'm baking apple cake today and after a search on the net, I landed on a recipe from Smitten Kitchen. It's in the oven as we speak and the smell is very promising.

Mom’s Apple Cake

6 apples, Mom uses McIntosh apples

1 tablespoon cinnamon

5 tablespoons sugar

2 3/4 cups flour, sifted

1 tablespoon baking powder

1 teaspoon salt

1 cup vegetable oil

2 cups sugar

1/4 cup orange juice

2 1/2 teaspoons vanilla

4 eggs

1 cup walnuts, chopped (optional)

Preheat oven to 350 degrees. Grease a tube pan. Peel, core and chop apples into chunks. Toss with cinnamon and sugar and set aside.

Stir together flour, baking powder and salt in a large mixing bowl. In a separate bowl, whisk together oil, orange juice, sugar and vanilla. Mix wet ingredients into the dry ones, then add eggs, one at a time. Scrape down the bowl to ensure all ingredients are incorporated.

Pour half of batter into prepared pan. Spread half of apples over it. Pour the remaining batter over the apples and arrange the remaining apples on top. Bake for about 1 1/2 hours, or until a tester comes out clean.

REC Mom's cake The apple cake I make for the Jewish holidays is so like

this recipe. And there is my mother's cake -

Mom's cake

This was my mother's cake for all those
times when you need one fast..we loved it
but she only would make it in emergencies!!
My sister and I make it all the time...

1&/1/2 bar butter
1/2 c. sugar
2 eggs
2 tsp. vanilla
1 1/2 c . flour
1 1/2 baking powder

Melt butter, add sugar, beat egg, add
vanilla. Sift flour & baking powder.
Pour into 2 round pans (not pour it's fairly
thick) Top with - thinly sliced
apples, cinnamon-nutmeg-brown
sugar, or peaches sliced or
blueberries and sugar ..in short with
whatever you have.. 40-45 til
browned. I serve as is, with ice cream,
fruit, whipped cream -- whatever...

 
funny about your puppy. My dog is afraid of the turkeys that the local feed store raises each fall

for a raffle. She sniffs and sniffs and walks right up to their enclosure, then when she lifts her head and sees them, she cowers back behind me, peaking out around my legs to watch, but won't go any closer to them. too funny.

 
*LOL*, that is too funny, AngAk. I have never met another dog who hides behind

the owners legs. I think he (my puppy, that is) is too cute when he does that. And of course, it brings out all the mommy genes in me! *LOL*
