you hardly need a recipe for this, but i'm not a lunch person so for me this was good inspiration.

idea from Raincoast Trading

serves 2-3

1 can tuna, drained

1 tbsp mayonnaise (i used 2)

1 tsp lemon juice (i used juice from 1/4 lemon)

1/4 cup diced celery

1/4 cup diced red onion (i left out)

1 grannysmith apple peeled & diced (i used 1/2 a mac)

salt and pepper to taste

sourdough baguette (i used 1/2 a costco triangle bun)

3/4 cup grated cheddar cheese

combine tuna, mayo, lemon juice, onion, celery and apple. season with s&p to taste. combine well. slice baguette/bun as desired (on the thin side - i lightly toasted mine first). cover with tuna mixture, sprinkle with cheese and broil for 2-3 minutes till bubbly and brown.

 
Can you recommend a brand of tuna you like? I've noticed the quality of certain brands seems lower.

 
On a BITof a related topic. My husband made a cheddar, peanut butter, and bacon sandwich this week

end. It was fantastic. He first had it at an irish restaurant in Flint, MI which has since closed. I recommend it wholeheartedly.

Bumblebee solid white albacore, really good. I only bought Kirkland til I tried this, we did

a taste test and Bumblebee won. Best part is that a supermarket here, Publix, often puts it on a buy one, get one free. I really stock up. Had tuna sandwiches for lunch today.

 
Somewhere I read that solid albacore is higher in mercury than the tuna used for chunk,...

so I switched to Starkist Chunk Light in water in the foil pouches.

My favorite sandwich is a tuna melt...tuna salad, (tuna, celery, mayo, S&P), add a slice of cheddar cheese, and grill just like you would make a grilled cheese sandwich. Add a bowl of tomato soup, and it's a retro winter day lunch! Mmmm!

 
Isn't it funny how tastes differ? I did the same thing, Curious- and chose Kirkland over Bumblebee

 
Bumblebee is what I always used, lately it just seems - well, a little fishy! That's why I thought

maybe time for a change. Maybe a taste test is in my future.

 
If you don't mind the price, check out the new Bumblebee that comes in a 4-pack, gold and black

can. I've always preferred the Starkist or Chicken of the Sea over the Bumblebee, but they have this new one and it is really good in my opinion. It's pretty pricey, that's why I only buy it when it's on two for 1. I looked today and it is almost $7.00 for a four pack, but at two for one, quite a bargain. Ever so often Publix has the two for one sale. However, if you shop Costco, I like the Kirkland also, but not everyone has access to Costco.
