Here's a quick and easy one. They are in the oven and smell terrific. Just my ideal proportions - a big old pan of streusel with just a little fruit thrown in
Apple Crumble Bars
Ingredients:
1 cup flour
½ tsp baking soda
⅔ cup brown sugar
1 ¼ cups oatmeal
1 tsp cinnamon
½ cup butter, softened
2 cups diced apples
**Optional: ½ tsp Nutmeg
Directions:
1. Preheat oven to 350 degrees
2. Grease 8” square pan
3. Mix together flour, baking soda, brown sugar, oatmeal, and cinnamon
4. Cut in the softened butter
5. Spread half of the flour mixture in the pan and press down
6. Top mixture with diced apples
7. Cover with remaining crumb mixture and press down lightly.
8. Bake for 30-45 minutes
9. Let cool for 15 minutes before cutting into squares
