REC Apricot Crockpot Chicken - it's what's for dinner tonight!

I had to use up some chicken that had thawed, so I started adding other ingredients that were once hidden in the back of the old refrigerator. Amazing what you can find there. ;o)

4 chicken breast halves

3/2 cup apricot preserves

Small can pineapple chunks in water

1 tsp powdered onion

1 Tbs Dijon mustard (I used Dijonnaise)

1 tsp soy sauce

1/4 tsp grated ginger

2 tsp Cajun hot sauce

Brown chicken, then place in crockpot. In a small bowl, mix all other ingredients and pour on top of chicken. Cover and cook on low for 6-8 hours or on high for 4-6 hours.

T'will be served with rice, beet and feta salad, and steamed green beans.
