Aunt Irma's Easter Egg Biscuits

6 cups all purpose flour

1 1/2 cups sugar

3 tablespoons baking powder

1 teaspoon salt

6 eggs -- beaten

1 cup vegetable oil

1/2 cup milk

1 tablespoon lemon extract

Icing:

1 pound powdered sugar

4 tablespoons milk

1/2 ounce lemon extract

Preheat the oven to 325 degrees.

Sift the dry ingredients together into a bowl. Make a well in the center and add the liquid ingredients. Gradually incorporate the dry ingredients into the liquids (may be done with the slow speed of an electric mixer) until a dough is formed. Let rest, covered, 20 minutes.

Break off small pieces of dough and roll into pencil-thin strips 6 inches long. Knot the ropes. Place on a buttered and lightly floured cookie sheet. Bake 12 to 15 minutes, or until lightly colored.

Sift the powdered sugar into a bowl. Beat in the milk and flavoring to make a smooth, runny icing. Dip the warm cookies into the icing and place on a cake rack to cool.
