This is good with a drizzle of poppyseed dressing and surrounded by fresh fruit.
It is good served with a chicken casserole and steamed broccoli.
1 6-ounce package lime gelatin
4 cups boiling water
2 Tbsp unflavored gelatin dissolved in 1/4 c cold water
2 cups ripe avocados pureed until smooth in food processor
1 cup mayonnaise
1 cup heavy cream, whipped
Dissolve lime gelatin in boiling water and slowly add dissolved unflavored gelatin. Stir thoroughly until dissolved. Refrigerate until slightly thickened.
Puree avocados in food processor until very smooth. Add mayonnaise and blend again.
Transfer the avocado mixture to bowl and add whipped cream, gently blending with wire whip. Add thickened gelatin and mix gently but thoroughly.
Pour into individual molds or large 3-quart mold that has been coated with vegetable spray. Chill until set and unmold onto lettuce leaves.
