Last night I hosted our bookclub's holiday party. It was appetizers and desserts and plenty to drink. One of the ladies brought this appetizer and I could not get enough of them. They were outstanding. It is a Paul Dean recipe and from what I understand this is what my friend did.

Took a Ritz (so a butter cracker) and put 1 tsp. of grated parmesan on it. Then wrapped that with a half or 1/3 slice of bacon. Then baked for an hour at a low temperature (325 I think) until the bacon was done. Sorry that I don't have exact instructions - this is how it was explained to me.

Oh. No. Not again. I've gotten through 3 holiday seasons trying to avoid this appie. It calls to me.

Read the reviews on it...there are always lots of pros/cons.

Personally, I would be so PRO on it, it would be a form of PROzac for me.

ried this last night -- very good appetizers!! The lady that made them put them on Melba rounds and some on Waverly Wafers.

Bacon Crisps

(Recipe from Paula Deen)

1/2 cup freshly grated Parmesan
1 sleeve buttery rectangular crackers (recommended: Waverly Wafers)
1 pound sliced bacon, cut in 1/2


Preheat the oven to 250 degrees F.

Place 1 teaspoon of the cheese on each cracker and wrap tightly with a strip of bacon. Place the wrapped crackers on a broiler rack on a baking sheet and put the baking sheets on the oven rack. Bake for 2 hours, or until the bacon is done. Do not turn. Drain on paper towels. Serve hot or at room temperature

Cook's note: You can also bake at 350 degrees F for 40 minutes if you're in a hurry!

 
These remind me of an appi I just saw while looking thru Bakewise at the bookstore. Saltines are...

layered in a pan and sharp cheddar grated atop. It is put into a very hot oven where the cheese breaks down. The separated fat soaks into the crackers making them richer, the solids melt and the whole thing crisps and gets FABULOUS!

 
~sigh~ This is new to me - I feel so deprived. I'll have to fix that this weekend......smileys/surprise.gif
