BARLEY WITH ROSEMARY & OLIVES
1 cup pearl barley
2 cups water
1/2 tsp salt
1 tbls fresh rosemary or
1 1/2 tsp dried & ground rosemary
1/2 cup coarsely chopped kalamata olives
1/4 extra virgin olive oil
In a heavy saucepan bring the water to a boil,
add the salt and barley. Lower the heat to
medium low and cover pot and simmer for a half
hour or until the water is absorbed and the barley is tender. Turn off the heat and add the rosemary and mix well with the barley. Cover and let rest for 5 minutes to blend flavor. Just before serving add the olives and olive oil, mix well.
