It also stays nice & not too hard to scoop in the freezer. I should add that I once wrote a letter to Ben and Jerry's after they discontinued this flavor telling them that sometimes life was just not worth living without Coconut Almond Fudge Chip and to PLEASE bring it back. Unfortunately my shameless manipulation had no effect, but now I can make it myself.

2 lg Eggs

3/4 c Sugar

2 c Heavy or whipping cream

1 c Milk

1 15 oz. can Coco Lopez Cream of Coconut

3/4 cup each toasted almonds & finely chopped bittersweet chocolate

I did all the base in the blender - I put the eggs in first, gradually added the sugar. The put blender on stir and added cream, milk & Coco Lopez. Pour in ice cream freezer & freeze. Stir in almonds & chocolate as you spoon into a freezer container. Ripen several hours in freezer.

 
Hey girl, there is absolutely nothing wrong with shameless manipulation, so long as you're wearing

the right shoes.

 
oh my, all my favorite flavors in ice cream. thanks, and they must be nuts to have discontinued it

 
I do understand why they use "fudge" chips though. I chopped bittersweet Ghirardelli's

and it sure does get hard (and truly, kind of flavorless) when it is frozen. I wonder how they make "fudge chips".

 
I think I might make up some dark chocolate fudge and cut it into small chunks for this.

Maybe it would not get as hard as regular chunked chocolate, which starts out hard already.

 
Great idea. Whatever they do must have a lower fat content than "eat out of hand"

chocolate to keep it from freezing so hard.
