This is the best Granola I have made. Easy, and so yummy and here are my tweaks:

I found that Trader Joe's shredded coconut has no chemicals like the store bought type, All it says for ingredients is "coconut".

Trader Joe's coconut oil is fabulous, the real deal

I add pistachio nut meats

I use Golden Flaxseed Meal because I have it on hand for my smoothies and it just disappears in this dish.

I cut the recipe in half for the two of us, it makes almost an entire half sheet pan

Be sure to use real maple syrup

I store it in a hermetically sealed glass jar in my pantry.

Coconut oil is healthy again. Another way to get oil out of granola recipe is to sub

apple juice. I use frozen apple juice concentrate if I do this. I also like dried blueberries in mine, added after baking, of course.

 
we have to watch the sugar so we use unsweetened applesauce. I will try this with the coconut oil

 
I think the coconut oil, helps make the granola cling together, doesn't it?

This granola is very easy to eat, no large, very crunchy clumps that can be hard on dental work.There are some clumps but they break up very easily. Would the applesauce plus the maple syrup make it too sweet? This granola is not too sweet. Chris said that at first she only had 6 T. of maple syrup and that is when I made it. Used 3 T. for half the recipe. She sent out a correction saying to use 9 to 10 T. syrup for the whole recipe. Today, since I was once again making half, I did 5 T. instead of three. I will taste it tomorrow after it sits all night. Right now I am thinking I will reduce the syrup back to 3 T. or maybe 4 for the half recipe. I is still good.

 
Karen, did you like 3 or 5 Tbs maple syrup better? And how

much Golden Flaxseed Meal do you use, please? We love granola and I want to make your/Chris's 1/2 recipe. Colleen

 
They are both yummy but I think I like the 3 Tbs. better. I will use 4 next time

and see how that goes. This batch had more clumps. I did not put in much of the flax meal, between 1/8 cup and less than 1/4 of a cup.

I also love using both the slivered and sliced almonds. Chris at Cafe Sucre, said she liked how the texture was with both varieties.
