We enjoyed this meatloaf very much, especially with all the veggies. My only tweak was that I had a few of those cute baby bell peppers which come in a bag with red, yellow and orange colors. I had seven, added them to the mix of veggies.. Served with steamed and buttered Yukon Gold baby potatoes, lightly buttered and a sprinkle of fresh parsley, and corn cooked with butter, fresh mint, and chives.
