Will be making this for Father's day. I sub the Italian Dressing mix for my own mixture of italian spices, garlic, Salt and pepper. I will also sub the mango for pineapple. I have made this numerous times. Used fresh corn, when in season. Really good, basic recipe. Also can add cooked rice (Brown or white)....

Black Bean and Mango Salsa

1 env. GOOD SEASONS Italian Dressing Mix

1 can (16 oz.) black beans, drained, rinsed

1 pkg. (10 oz.) frozen corn, thawed

1 cup chopped ripe mango

1/2 cup chopped red pepper

1/3 cup chopped red onion

1/3 cup chopped cilantro

1/4 cup lime juice

MIX all ingredients until well blended; cover.

REFRIGERATE at least 1 hour.

SERVE with grilled chicken or tortilla chips.

 
Marsha, no there's no Publix here - Harris Teeter is the main supermarket. You must be getting local

ones, yes?

 
This city doesn't offer much in the way of ethnic food markets, but there may be one somewhere. I'll

Hope you enjoy it! It is very refreshing on a warm day. Also appreciate not having a mayo based

salad.

 
I do this kind of salsa all the time and like you I use whatever fruit is

in season and available at that time. (Living in Saudi Arabia taught me how to adapt...LOL) Peaches, pineapple, mango, papaya etc. All work. A diced up jalapeno finds seems to find it's way in every time also. Just seems like the right thing to do. ;0) Soooo good on chicken burgers.
