Black Bean Zucchini Quesadillas
Found this recipe on line - it is from "Fresh Food Fast: Delicious,
Seasonal Vegetarian Meals in Under an Hour" by Peter Berley and
Melissa Clark.
I made these for supper last night - great taste and very filling.
2 pounds zucchini, grated
1 1/2 teaspoons salt
30 oz cooked or canned black beans, drained
12 oz Monterey Jack cheese, grated (I used organic cheddar)
2 green onions chopped
1 jalapeno pepper, minced
8 eight-inch tortillas (I used Ezekiel brand)
Olive oil
Toss zucchini with salt in a colander and squeeze out excess water.
Combine zucchini, beans, cheese, green onions and jalapeno.
Brush one side of tortilla w/ oil. Place tortilla oil side down on
pan (I used griddle and did two at a time). Spread 1/4 of zucchini
bean mix on each tortilla then cover with oil side up tortilla.
Fry over medium heat for 3 mins each side, until golden or broil on
baking sheet 1-2 mins each side.
Serve with salsa.
We also had a green salad with this.
