Ingredients for 4 people:

1.5 kg of green asparagus

Salt

200 g Emmental cheese

1/4 l of Hollandaise Sauce (make your own or use a mix)

8 thin slices (about 125 g) Black Forest ham

Butter for the mold

Chervil or parsley to garnish

Preparation:

1. Cut the ends from asparagus generously. Wash asparagus and cook, covered in boiling lightly salted water for about 10 minutes.

2. Meanwhile, coarsely grate cheese. Drain asparagus.

3. Wrap 4-5 asparagus spears with a slice of ham and place in a buttered baking dish. Pour hollandaise sauce over and sprinkle with cheese.

5. Bake in preheated oven at 200° C about 15 minutes until golden brown. Garnish with chervil. Serve with garlic baguette croutons.

Garlic Baguette Croutons

8 slices baguette

4 cloves garlic, minced

1 tbls. olive oil

2 tbls. butter

Heat butter and oil to combine in large pan. Sprinkle with garlic, lay bread slices on garlic. Toast over medium low heat until baguette slices are golden brown.

Set Asparagus Ham Rolls on Garlic Baguette Crouton. Serve as a side to a Roast with potatoes or Spätzle.
