I tried the Raspberry crush I saw in the complimentary subscription to Bon Ap that I'm receiving and modified it thusly to amazing results.

1/2 cup blackberries

Juice of 1/2 lime

2 oz. vodka

1 tbls. honey (or more to taste if you like it sweeter)

dash of orange bitters

Add to a cocktail shaker, muddle until the blackberries are pureed. score the lime half with a knife all over and toss in. Fill shaker with crushed ice and shake vigorously. Pour, unstrained, into preferred glass (should fill 2 glasses halfway). Top with dry champagne, garnish with a lime slice.

Here's another (with cucumber, mint & gin) that was just in Southern Living that I want to try:

Blackberry Cocktail:

Ingredients
1 (0.75-oz.) package fresh mint sprigs
12 (1/4-inch-thick) cucumber slices
2 (6-oz.) packages fresh blackberries
3/4 cup fresh lime juice (about 3 limes)
8 to 12 tsp. turbinado sugar*
1 cup plus 2 Tbsp. gin
1 cup cold club soda
Crushed ice
Garnishes: cucumber slices, fresh blackberries, lime wedges, lemon mint sprigs
Preparation
1. Place first 5 ingredients in a large pitcher. Gently press mint leaves, cucumbers, and blackberries against side of pitcher with a wooden spoon to release flavors. Stir in gin and club soda. Serve over ice. Garnish, if desired.

*Superfine or powdered sugar may be substituted.

Note: We tested with Hendrick's Gin.

Oh, that sounds delicious...

I started making English-style cucumber punches for the summer and everyone seems to love the cucumber flavor (after several had to get over their lack of interest to try it). I can't wait to try this one.

And Hendrick's is absolutely the best. Especially since they use cucumbers (and roses!) with the other botanicals they flavor it with.

I've never had a cucumber punch/cocktail, although I've read about Pimms Cups

all my life. Gotta try this. You know, at the little Mexican fruit stands around here they always have cucumber and jicama in with the fruit and it is a nice contrast. I never have gin on hand so will have to buy a small bottle.
