REC Blackberry Muffins, recipe from the 1930's

Blackberry Muffins

2 2/3 cup flour

4 t baking powder

1/2 tsp salt

1/3 cup sugar

1 cup buttermilk

1 egg, beated

1/4 cup butter, melted

1 cup blackberries

Mix and sift dry ingredients into a mixing bowl. Add milk and gradually beat until smooth. Add the beaten egg and melted butter. Add berries which have been lightly floured. Pour into greased muffin tins and bake in an oven, 400 degrees for 25 minutes.

The recipe called for canned cherries, but I make them with boiled down pitted cherries. So good! (Shh, don't tell Aunt Sarah, but I used Pillsbury biscuits for the dough.)

Make a biscuit dough using:
1 1/2 cups flour
1 1/2 T butter
3 t b powder
1/4 t salt
1/2 cup milk

Roll out and cut in large circles. Fill each with well-drained canned cherries then bring in the sides and pinch the top of each dumpling together. Place in a deep baking dish and cover with 2 cups of sugar and dot with 2 T butter. Pour boiling water over all until the dish is half full and bake 1 hour.
