Gayle - your cake was wonderful! Gayle's notes are at the beginning, my notes at bottom...

You can also use your own basic white cake recipe and add the extras. Have done it both ways with no noticable difference. I do not use nuts and do not use tube pan. I bake this in layers and frost with a white frosting in which I add 1 pkg of raspberry Jello that I've softened in a small amount of heated wine. (1/4 - 1/3 c approx) You might need to add extra powdered sugar to thicken it up, or not. Would depend on your recipe, I think. There is never any left!

Blackberry Wine Cake

1 box white cake mix

1 box raspberry jello (I used 4 Tbl.)

1 cup blackberry wine - Manischewitz or Mogan David work well

4 eggs

3/4 cup vegetable oil

Glaze

1 cup granulated sugar

1/2 stick butter

1 cup chopped nuts

Steps:

CAKE - Grease and flour a tube pan. Place nuts in bottom of pan. Mix 1/2 cup wine with cake mix, Jello, eggs, and oil. Pour this mixture over the nuts. Bake at 325 F for 50 minutes or until done.

GLAZE - Add 1/2 cup wine to sugar and butter. Bring to a boil. Pierce several deep holes in top of warm cake and pour on glaze. Turn cake out after slightly cooled.

NOTE The taste of this cake improves after a day or two when stored at room temperature. It also freezes well.

Left out the nuts - It just wasn't needed.

I found the glaze waaayyy too sweet (although it didn't keep me from going back for "one more bite"). I did as suggested and made a frosting (cream cheese/butter/powdered sugar) with 2 tbl. raspberry jello dissolved in about 3 Tbl. heated wine. Then I sprinkled a little wine on the layers before frosting them - yum!

This is so pretty....and perfect for V-Day rapidly approaching.

I had hesitated when this was first posted because I thought the wine taste might be bitter (having screwed up way too many spaghetti batches by flagrantly dumping in wine).

I've got a blackberry sweet wine, definitely sweeter than MD, more of a dessert wine. Would that work? I'd like to use it up before it turns into expensive vinegar.

 
GayleMO - are you there for this question??! The Manischewitz is what I used

and it is nice and sweet. Yours sounds perfect -- it shouldn't be bitter at all! I even liberally sprinkled the layers with the straight wine before frosting it, and it was very sweet.

I got 5 more "thumbs up" at lunch today - they all just loved it!

Marilyn, I think your blackberry wine would be fine!

I'm just getting online 1st time since Saturday am as we have been without electricity due to this terrible storm. We live in the country but our town is still totally without electricity.

Hi Gayle...

I have been thinking about you. I either emailed or pm'd you to see how you were doing. We are not bad up here. The storms seem to be gliding past us mostly. We had a lot of sleet and freezing rain late last week, and finally got some snow yesterday, but only about 2-3 inches, but it is enough to let the kids go sledding. It is bitterly cold though, and I am not enjoying taking my new puppy out. I am wearing two hats and two scarves...lol. I look ridiculous, I know, but hey it keeps me warm. We have had the fire going most days, so the house has been nice and toasty.
We had a snow day today, I am not sure why because it is sunny and clear out. The only thing I can figure is that the roads must be icy, and the school buses cannot navigate the icy county roads.
Stay warm and toasty, and I think you better whip up a batch of some delicious soup! There have been some really nice ones posted lately. Take care gf.

Our town is 100% without power. No phones working unless some cells are back on now. Much worse here than in Springfield.

There is about 1 1/2 - 2" of solid ice on everything! No trees left standing with branches. Electric poles snapped in half.

We live in the country and our power came back on late yesterday. Could go out again at any time from falling tree branches. I'm heading out in a bit to drive to another town - towards Joplin or Branson where it wasn't so hard hit.
Please, any of you who believe in prayer, pray for the people stranded in cold homes bundled up in blankets.

Will check in when I can.
