My blueberries have just started to ripen, and I picked the first bowlful yesterday. This is my favorite (and easy) way to use them.

1 C flour

2 t baking powder

1 t salt

1 C cornmeal

1 C sugar, divided in 1/2

1 egg

1 C milk

5 T butter, melted

1 C blueberries

Sift together flour, baking powder, salt, cornmeal, and 1/2 C sugar in a bowl. Combine egg, milk, and melted butter in another bowl. Stir liquid into flour mixture just til moistened (don't overmix). Fold in blueberries. Spray 12 muffin cups with cooking spray, spoon batter into muffin cups. Sprinkle tops with 1 t sugar each. Bake at 400 F for 20-24 minutes.

These are great for breakfast!
