I had bought a bag of baby new potatoes, only to open them in order to prepare them, I found the whole bag was rotten. I just bought them the day before, so I was shocked to find them all slimy. I also discovered that there is not a store open on xmas day, in the town I live in. Literally, nothing but the gas stations.

Luckily, I found about 1 1/2 pounds of yellow potatoes and about 4 humongous russet potatoes (think like a pound each). I made a batch of mashed potatoes and this recipe for Boursin Potatoes. I boiled the yellow potatoes, and sliced them up and layered them in a gratin pan.

These were excellent, however, I had my mind set on making the flattened potato recipe that has been posted here. Oh well.

Amount Measure Ingredient -- Preparation Method

3 lbs red potatoes -- unpeeledsalt and pepper

1 pint heavy cream

1 package boursin cheese -- (5 ounce)

fresh chives or parsley -- chopped

Slice potatoes into quarter inch rounds and toss with salt and pepper. Slowly heat cream and cheese together until thoroughly melted.

In a deep casserole dish layer half the potatoes. Cover with half the cream mixture. Repeat.

Cover and bake at 350 for one hour. Sprinkle with chives or parsley and serve.

NOTES : Not a "figure friendly" side dish, it tastes incredible. Nice to serve at special dinners or when you're not counting fat and calories.

Dnote: I precooked the potatoes then layered them in a gratin pan.

 
Oh my...I put on 5 lbs. just reading this decadent recipe!

Sounds so good. Will make it for my next dinner party.
