Oh how this sounds delish to me (I'm making another apple slab pie today) unfortunately, hubby has no interest in it:( (he is not a fan of potatoes - only likes them in a few rare instance likes the Greek Lemon Potatoes).

But - next time we have a houseful I'm going to try this. To stream line it I will probably roll out the crusts the night before - fitting the bottom crust in the baking pan and covering tightly with plastic wrap and rolling out the top crust on my pastry cloth and also covering tightly and then both keeping them in the fridge overnight.
