Broccoli Cole Slaw

Recipe courtesy Linda Fuller and Christine Lakhani

Yield: 10 to 12 servings

2 bags (3-ounce) Ramen Noodle Soup in Oriental (other flavors will work, too)

3/4 stick butter

1/4 cup slivered almonds

2 bags (12-ounce) bags broccoli cole slaw (in the bagged salad section of the grocery store)

1/4 cup sunflower seeds

Chopped green onions, for garnish

Dressing Mix:

3/4 cup canola oil

1/4 cup brown or white sugar

1/4 cup apple cider vinegar

1 ramen noodle seasoning packet

Put the ramen noodles in a bag and crush them with a rolling pin while melting butter in a large skillet over low/medium heat. Add the crushed noodles and slivered almonds to the skillet and saute, stirring occasionally (keep temperature at low/medium heat). Meanwhile, whisk together all the dressing ingredients in a small bowl. Place the shredded broccoli into bowl and toss with the noodles, almonds, and sunflower seeds. Pour dressing over salad and toss to coat. Garnish with chopped green onions.

Hi Dawn, Rick, everyone!!

I realized y'all knew me as "Jane in L.A." on the old Gail's board, but this one doesn't let me do handles like that smileys/smile.gif

This board is great - as it *should* be -hint, hint, Epi. I just wish it would 'pop back' to where I was in the list when I hit the back button -- it always goes to the top and I forget where I was!

I make this and here are some additional ideas.....

I put either a can of chicken (if I am in a hurry) or freshly cooked chicken in with it for a main dish salad. I've also tried tuna and that worked well also.

Add chopped apple, mandarin oranges for a more fruity salad, especially with the chicken.

Jane, are you using Mozilla Firefox? I am and have the same problem. Mimi said it's a glitch

with Firefox. Tried to find the post where she explains it in detail but the Search feature seems to be down right now. It doesn't happen with Internet Explorer, the page bounces back to where you were. It's a feature that bugs me that I have to scroll back to the post I was at previously when I hit the back button but I've come to live with it (sorta).

I'm really outa my league here..but...is it possible to open the posts in another window>>>

(right click, and click on "open in another window) and then when you are finished reading everything you can just close the window?
