Rec. Butter Crunch Green Beans

1# young green beans

3 tblsp butter

1 tsp lemon juice

1/2 c chopped cashew nuts

5 tbsp dry white wine

1 tsp sugar

1/2 tsp grated lemon peel

Cut beans in long thin slices on the diagonal. Place in a pot with cold water to cover; bring to boil over moderate heat. Cook 5 minutes. Drain. Melt butter in saucepan, add lemon juice, peel, wine and sugar. Add drained beans. Cover tightly and cook slowy, stirring occasionally, until crisply tender, about 15-20 minutes. Add cashews and additional butter, if desired.

Serves 6-8
