Fall is coming, so here's a great recipe:
Cabernet Braised Beef Short Ribs
6 beef short ribs
salt, white pepper and black pepper
1/2 c vegetable oil
1 c flour
2 med. onions, chopped
3 med. carrots, chopped
3 shallots, diced
2 celery stalks, chopped
6 garlic cloves, minced
2 dried chilies, seeds removed
3 T tomato paste
1/4 bunch thyme
3 c red wine
2 quarts beef or veal stock
Season ribs with S&p, then dredge in flour. Add veg. oil to large shallow pot
& heat on med high. Add ribs & sear all sides, then remove from pot & set
aside. Add veggies, garlic & chilies. Lower heat, season w s&p then cook 'til
tender. Raise heat and add paste. Carmelize for 3 min. Add wine to deglaze &
reduce by 1/2. Add stock & ribs and bring to boil. Turn off heat, add thyme,
then cover pot w lid or foil. Cook in 250 degree oven for 3 hours or 'til
meat is tender. Strain liquid to remove veggies. Discard veggies.
Gnocchi
1 1/2 lb. potatoes
2 c flour
2 egg yolks, large
1 1/2 T kosher salt
1 T truffle shavings (optional)
Preheat oven to 350 and bake potatoes 45 min 'til cooked thru. When warm, peel
& process thru ricer. Place on work surface and make a well. Add 1/3 of flour,
eggs & salt to well. Work ingredients together, then add truffles & remaining
flour. Work dough to form ball 3 min. Pull off small section of dough and roll
it by hand on lightly floured surface into a strip about 1/2" thick. Cut into
3/4" pieces & roll onto the back of a fork to create desired gnocchi shape.
Cook gnocchi in salted boiling water 'til they float to the surface, then remove
& shock w cold water. Use immediately or freeze.
Oyster Mushroom Heirloom Tomato Ragout
3 T unsalted butter
8 oz oyster mushrooms
3 c gnocchi
6 oz mini heirloom tomatoes, quartered
1 c chicken stock
1 T gremolada
s&p
In hot saute pan, heat 1 T butter on high, then add gnocchi & mushrooms. Cook
'til golden, 2 min. Add stock, butter, tomatoes & 1 c of braising liquid from
ribs. S&P and gremolada to taste
Gremolada:
Equal parts chopped parsley, garlic & lemon zest
Serve w ribs.
NOTE: I used Trader Joe's gnocchi the first time I made this and it was good, but will try my own next time.
