This recipe is from my friend Leslie. Not sure the original source. It is really good. She is always asked to bring it to parties. SHe adds all of the extra vegie ingredients....
Mock Caesar Salad Recipe
1/2 cup quality olive oil
2 tablespoons fresh lemon juice
2+ large garlic cloves, crushed
1 teaspoon anchovy paste
1/2 teaspoon Worcestershire sauce
1/4 teaspoon granulated sugar or sugar substitute
Salt and freshly ground black pepper to taste
1/4 - 1/2 cup grated Parmesan cheese
Procedure for dressing:
In bowl or 4 cup measuring cup, measure all the dressing ingredients and whisk until blended.
Cover and refrigerate (any left over will keep several days)
Salad:
Use your favorite greens. Typical caesar is romaine, croutons or bacon bits.
I use combination romaine and bagged butter lettuce, or butter combo with other greens
Add other salad favorites, such as: cucumbers, sliced black olives, cranberries, diced fresh green scallions, hearts of palm, avocados. Prepare that morning and put in separate baggies and refrigerate.
For 35 people:
Use 5 bags of lettuce. Increase dressing recipe ingredients x 4. You will have lettuce and dressing left over. Pour dressing and toss each time; careful not to use too much dressing.
