Cappuccino/Cinnamon Brownie Bites
Brownies are often enjoyed with ice cream and a cup of coffee.
Here, the coffee is in the brownie and the ice cream is nixed for a smooth frosting.
1 tablespoon instant espresso powder
2 large eggs
4 ounces bittersweet chocolate
1/2 cup all-purpose flour
3/4 stick of unsalted butter
1/4 teaspoon salt
3/4 cup sugar
1/2 cup chopped walnuts
1 teaspoon vanilla
Non-stick cooking spray
Preheat oven to 350 degrees.
Dissolve espresso in 1 tablespoon hot water. Melt chocolate, butter, and espresso paste using a double boiler.
In a separate bowl mix the sugar, vanilla, and eggs; add to chocolate mixture.
Next, fold in flour and salt, followed by the nuts.
Spray 9-inch, square cake pan with cooking spray and pour in mixture.
Bake approximately 20 minutes. Makes 18-24 depending on size.
cinnamon cream cheese frosting
4 ounces cream cheese
1/2 teaspoon vanilla
3 tablespoons butter
1/2 teaspoon cinnamon
1 1/2 cups confectioners’ sugar
Blend cream cheese and butter. Add powdered sugar; mix until smooth. Add vanilla and cinnamon; mix until just incorporated.
