CARAMEL APPLES

4 medium apples
2 cups sugar
1 tablespoon corn syrup
1/2 cup water
1 cup butter -- cut in pieces and at room temperature
1 cup heavy cream
1 Pinch salt
Fill a bowl with water, to chill caramel if it starts to burn. Insert a stick into apples. Place sugar, syrup, and water in a saucepan and stir with a wooden spoon to combine. Then, do not stir until the color is a deep amber. Remove from heat. Using a clean wooden spoon, beat in butter then stir in cream and salt. Dip apples and place on waxed paper until hard.
