RECIPE: Rec:Caramelized Chicken Drumsticks..evidently I never got around

to posting this recipe because I can't find it when I do a search. That doesn't say much because I always have a problem searching things here. I do want to post it because these are really good. It's a Publix recipe but I can't get a picture to go along with it. They really look beautiful when finished.

Edited to say:

This makes a large amount of the marinade and can be easily cut in half and use 8 legs and thighs.

Caramelized Chicken Drumsticks

½ cup honey

¼ cup soy

1 Tbsp. Canola oil

1 Tbsp. Peanut butter

1 Tbsp. Grated fresh ginger

1/2 Tbsp. Fish sauce

1 clove garlic

1/8 tsp. Salt

4 chicken drumsticks

Preheat oven to 375 Line baking pan with foil, set aside

Mix all ingredients and add chicken legs. Place chicken on baking pan and bake 50 to 60 minutes, basting and turning occasionally until chicken is dark brown, caramelized and an instant read thermometer inserted into the thickest part of the chicken reads 165 F.

but will probably reduce the honey amount a bit, and keep the rest of ingredients unchanged

half a cup of my precious honey leaves me a bit paralyzed smileys/wink.gif

I think I'll use half that amount, should be enough to get a nice caramelization effect... what do you think?

 
Oh man I'm so glad you said that! I made this about a month ago

and just saw the recipe again the other day. I know I cut the recipe in half because it is just the 2 of us and it made way to much marinade. Honestly, you can cut the ingredients in half and use 8 legs or thighs. There will be plenty. I also used thighs by the way. I will go in and edit the post with that info.

I thought the amount was also a bit excessive - for 4 legs?

oh, well - great to know we are on the same page with that, I am trying it hopefully soon, love the idea of the peanut butter. I love cooking with it, although I do not eat it as a spread, never developed a taste for it
