Caramelized onion and gorgonzola quiche

1 tbls extra virgin olive oil

1 lb onions, cut crosswise into rings

2 large eggs

1/2 cup milk

1/2 cup heavy cream

1 tsp coarse salt

freshly ground pepper

2 oz gorgonzola dolce

heat oil in a large heavy-bottom skillet over low heat until hot but not smoking. cook onions, stirring frequently until golden brown. about 30 minutes. let cool.

whisk eggs, milk, cream and salt in a medium bowl and season with salt and pepper. crumble cheese and stir in onions. pour mixture into tart shell and bake at 400 degrees until puffed and pale golden brown - 30 to 35 minutes. let cool at least 30 minutes before serving.

note: 400 seems a bit high to me so I'll go with 375 degrees.

this goes into a partially baked tart shell. i figured you all have your fav recipes for that but i can post if anyone wants it.

oh duh! the recipe says to bake at 400 for 30 - 35 min until puffed and goldnen...

brown. that seems a bit high to me so I'll go with 375 degrees. I'm going to make this tonight so I'll let you know how that worked out.
