Carnival Caramel Apples

Serving Size : 10

1/2 cup butter -- cubed

2 cups packed brown sugar

1 cup light corn syrup

1 Dash salt

1 14-ounce can sweetened condensed milk

1 teaspoon vanilla extract

10 medium tart apples -- washed and dried (10 to 12)

1 cup peanuts -- salted, chopped

10 Popsicle sticks

In a large heavy saucepan, melt butter; add the brown sugar, corn syrup and salt. Cook and stir over medium heat until mixture comes to a boil, about 10-12 minutes. Stir in milk. Cook and stir until a candy thermometer reads 248° (firm-ball stage). Remove from the heat; stir in vanilla.

Insert Popsicle sticks into apples. Dip each apple into hot caramel mixture; turn to coat. Dip bottom of apples into peanuts. Set on greased waxed paper to cool. Yield: 10-12 apples.

 
question about the popsicle sticks... anyone know where I can buy them?

Michaels had some but they were about $8 for a handful!

 
Try Smart and Final or Safeway or any major grocery chain this time of year has them with the

display of caramels and apples.

 
Check the craft/cake decorating aisles at the Walmart.

In the craft department, they usually have an aisle or two devoted to wooden pieces, from popsicle sticks to wooden dowels, etc.

 
Are the craft sticks foodsafe? I asked the salesperson at our craft store and she wasn't sure...

I didn't want to take a chance, so I didn't buy it.

I just bought some popsicle sticks at Amazon. They weren't as cheap as the craft sticks, which are bags of 10,000 or some such crazy amount, but since they're sold as freezer pop sticks, they should be foodsafe.

I didn't think these would be hard to find, but I was looking for some to make party favors, and couldn't believe I could not find them in the local stores!
