1 orange, cut into 1/4" slices

6 c orange juice, divided

1-1/2 tbsp chopped crystallized ginger

1/2 whole nutmeg, grated

2 c finely grated carrots

3/4 c champagne

1 tbsp grated orange rind

Combine orange slices, 1/2 c orange juice, ginger and nutmeg; simmer 3 to 5 minutes. Strain, discard orange slices. Cool orange juice mixture.

Combine orange juice mixture, remaining orange juice and carrots; chill. Stir in champagne and orange rind, serve at once.

Serves 10-12
