Cauliflower Mussalam

Serves 6-8

1 large head cauliflower

1 tbsp veg oil

8-10 whole cloves

1/4 tsp crushed cardamom seeds or 1/4 tsp ground cardamom

1-1/2 tsp ground ginger

1 tsp anise seed

1 scant tsp chili powder

1 tsp salt

1 cup plain yogurt, lightly beaten

Garnish: chopped fresh coriander,or chopped fresh parsley

Preheat oven to 350. Cut off tough end of the cauliflower and snap off any green leaves. Steam or boil the cauliflower until tender but still slighty crisp. Remove, drain if necessary, and place cauliflower in a buttered baking dish.

Heat the oil in a small heavy pan. Add all the spices and saute briefly, 30 seconds or so. Stir in the beaten yogurt and simmer the sauce 1-2 minutes. Pour yogurt sauce over the warm cauliflower.

Place dish in preheated oven. Bake 12-15 minutes, until sauce is golden brown on top. Serve hot, garnished with chopped coriander or parsley. Before presenting the dish, you may remove the whole cloves, if you desire.
